So zucchini noodles, zoodles, whatever you may call them (I’m sure you have a name because you are so far ahead of me), I am just now trying them out.

I know! Where have I been? Everyone is all “yay cloud eggs” and I’m like can we just slow down and go back to last year’s veggie noodle revolution for just a bit. I need to catch up!

I bought this Noodle making contraption called a “veggetti,” which I’m seriously not mature enough to own and not because of how it’s used as much as the name, in order to start a personal veggie noodle revival. I guess it’s too soon to consider them a vintage food…

So here we are with my version of zucchini noodles, which are covered, smothered really, in a creamy avocado pesto sauce and topped with some, okay a lot of parmesan cheese. Oil + cheese is some kind of heaven right? Right!

Let’s be real for a second, not that I wasn’t before, but this is one super healthy plate of pasta (obvy it’s not real pasta, but still!) and if you have a special diet such as Bulletproof, Paleo, Vegan, or dairy free then just omit the cheese and hello happiness on a healthy plate!

Friends, don’t stay behind the times like I did on this one, which I’m sure you’re all like “Aim, seriously, I’ve been making zoodles since 2015!” I get it, but have you made these zoodles??

Avocado Pesto Zucchini Noodles

Description

Craving pasta but want to be healthy? This Avocado Pesto Zucchini Noodle dish is covered in a creamy pesto sauce and topped with cheese but still healthy.


Ingredients

  • 4 large Zucchini (spiralized)
  • 1 medium Avocado
  • 1 cup Fresh Basil Leaves (stems removed)
  • 2 tablespoons Pine Nuts
  • 1 large Garlic Clove
  • 1/4 cup Extra Virgin Olive Oil
  • 3/4 cup Parmesan cheese (Grated)
  • 3 small Radishes (sliced)
  • 1/4 cup Broccoli Sprouts (*optional)

Instructions

  1. Spiralize all the Zucchini into noodles and place in a heat-proof glass bowl. Heat in the microwave for about 2 to 3 minutes or until the noodles begin to soften.
  2. Place the Avocado, Basil, 1 tablespoon of Pine Nuts, Garlic, Olive Oil, and 1/4 cup Parmesan Cheese into a Food Processor and pulse until mixed but still has a slight texture. Toss the pesto sauce with the zucchini noodles.
  3. Divide the noodles between 4 plates and top with the Radishes, additional Parmesan Cheese, Sprouts, and additional Pine Nuts.

Notes

Because of the avocado in the pesto sauce, you’ll want to serve this immediately otherwise the pesto sauce will start to brown as all avocados do (even if you sprinkle in lemon juice). Trust me, you’re going to want to eat this right away anyways!

    I’ve been meaning to buy a spiralizer for a while, especially since I’ve had great success on a low-carb diet I started a few weeks back. Your post here has convinced me to go ahead with that spiralizer purchase, since it would be so nice to add some variety to my low carb meals. Your recipe looks oh so lish! Such gorgeous photos too!       I definitely think you should get one and I’m so glad I could help with that inspiration. It’s so nice to have because I often have leftover carrots or in this case zucchini and it’s so nice to spiralize them into something new. Way to go on your diet success and thanks for your sweet comments too!
