Sausage is one meat I can get everyone in the family to eat, which is why I like to prepare simple ones like this recipe or more classic dinners such as Kielbasa and Sauerkraut.

This is an extremely easy effortless weeknight meal that has less than 5 ingredients and can be made in under 35 minutes. This sheet pan dinner will quickly become one of your favorites especially when you try all the recipe variations.

It’s so delicious your entire family will love it whether you’re serving it over a hoagie roll or over mashed potatoes. This is one dinner I never get complaints about.

Ingredient Notes

  • Sausage Links: I like to go to the meat department to get the Italian sausage links when making this recipe, however, you can also find them in the meat section of your grocery store. You can also get the flavor of sausage you like. Another great sausage to use is kielbasa sausage.
  • Italian Seasoning: You can use a store-bought Italian seasoning blend for this recipe or you can make your own. If you’d like to make your own Italian seasoning you can combine 1 tablespoon dried basil, 1 tablespoon dried oregano, 2 teaspoons of Rosemary, 1/4 teaspoon Majoran, and 1/4 teaspoon thyme.
  • Olive Oil: This recipe is cooked at a high temperature of 425º F and if you’d prefer not to cook with olive oil at this temp then you can half the oil needed and use one such as avocado oil or vegetable oil. Then when the recipe is finished drizzle some olive oil on top to get the flavor. Since there are so few ingredients in this recipe I like to use high-quality olive oil to get the best flavor.

Recipe Variations

  • Hawaiian Barbecue: Add some fresh sliced pineapple to the sheet pan and toss in some of your favorite barbecue sauce for a unique and tasty flavor.
  • Philly Style: Instead of red and yellow bell peppers use green and red. With 5 minutes of cooking time left sprinkle the sausage, peppers, and onions with shredded mozzarella cheese. Then serve it on a hoagie.
  • Greek Gyro: Serve on top of pitas and add some lettuce and sliced tomatoes. Then drizzle with a Tzatziki sauce.

  1. Arrange the sheet pan. On a large rimmed baking sheet add the sausage, bell peppers, and red onions.
  2. Toss with oil. Drizzle the olive oil on top and add Italian seasoning. Toss to coat the sausage, peppers, and onions.

  1. Bake. Score the sausages in a few spots so they cook evenly. Bake for 20 minutes and then flip the sausages and toss the peppers and onions. Return to the oven to cook for an additional 15 to 20 minutes.

How to Serve It

  • Hoagie Rolls: This makes for a delicious weeknight dinner, but also a fun weekend meal. Pile the sausage, peppers, and onions on top and drizzle with your favorite sub sauce.
  • Mashed Potatoes
  • Rice
  • Cheese: Melt some cheese on top for a creamy and cheesy flavor.
  • Fajitas: Grab some tortillas and turn them into some fun fajitas.
  • Polenta or Grits: This can be served over some buttery and cheesy polenta or grits for a heartwarming meal.
  • Cauliflower Mash: If you’re trying to keep your carbs low whip up some mashed cauliflower and spoon this sausage and peppers on top.

Storage Tips

I don’t recommend freezing this recipe since the sausage will turn out tough when thawed and reheated. One of the best things about this recipe is how easy it is to make so waiting for it to thaw only adds time anyway.

  • To Store: Place any leftovers in an air-tight container and store them in the fridge for up to 4 days.
  • To Reheat: Reheat any leftovers carefully in the microwave or in a skillet with cooking spray.

  • The key to getting the peppers and onions to cook at the same time as the sausage is to use enough. If you use any less than this recipe calls for and you run the risk of the vegetables burning.
  • This recipe is best served fresh, but it can be reheated. If you think you’ll end up with leftovers then I recommend getting a sausage such as a kielbasa which reheats easier than Italian sausage links.

Yes, you can. If you plan on using pre-cooked sausage then reduce the oven temperature to 400º F and then only cook it for 20 to 25 minutes.
