“Breakfast Casserole.” Full stop…

I could just cut this post short right here and be done because 1. Summer Dayz and 2. Breakfast Casserole, which is pretty much everything you need to know about this delectable recipe.

Perhaps I am getting a bit ahead of myself so I’ll do what I do best and elaborate… Currently, here we’re in full swing summer mode, summer days, summer lovin’ and that means a slow easy breezy mindset, which may or may not go right through the fall season, with a focus on the word easy.

Afterall summer is the season to kick back and relax before the fall abundance and baking and squash, and full on feasts but I’m getting ahead of myself again. In an effort to remain in the breezy mindset this summer I’m keeping breakfast easy and what’s easier than a casserole you can heat and eat on repeat (I so did that)? All the 80’s mom’s out there high five as I am your child.

This easy summer casserole is a double doozy though because not only is it one of the easiest to make ahead breakfasts out there it’s also Paleo, which means a healthy breakfast especially if you’re eating Paleolithic these days.

I guessing many of you like those easy healthy dinners 😉! But hey, there’s always room for those not so healthy breakfast casseroles and so I wouldn’t let you down and have a Bacon and Grits Casserole for your not-so-healthy side, cheat day if you will or cheat week rather. Maybe just eat healthy the rest of the day cause it’s kind of worth it.

And now I’ve gotten off track again… See how my summer brain works around here. It’s in total vacay mode, which is why making breakfast only once a week and enjoying it the rest is the way to go and this Paleo Breakfast Casserole is the way!!

Paleo Breakfast Casserole

Description

This Paleo Breakfast Casserole is perfect for meal prep as well as good for those times of the year when you need a healthy and easy breakfast.


Ingredients

  • 1 Medium Sweet Potato (Sliced or shredded )
  • 2 tablespoons Coconut Oil
  • 1/2 medium Onion
  • 1 Lb Ground Bison (or Ground Beef)
  • 1/4 teaspoon Cumin
  • 1/4 teaspoon Chili Powder (more if you like some spice)
  • 1/4 teaspoon Salt (plus more for seasoning eggs)
  • 1/4 teaspoon Black Pepper (plus more for seasoning eggs)
  • 12 large Eggs
  • 5 strips bacon (Cooked and Crumbled)
  • pinch Paprika
  • 1 teaspoon Fresh Parsley

Instructions

  1. Preheat the oven to 375 degrees

  2. Grease a 9 x 9 baking dish (or a 9×6 as shown in images) with Coconut Oil and set aside. Heat the other 1 tablespoon of Coconut Oil in a medium sized skillet set to medium heat. Once the oil has melted add in the Ground Bison or ground meat of choice and season with Cumin, Chili Powder, Salt and Pepper. Cook until the meat has browned.
  3. While the bison is cooking peel and shred or slice your Sweet Potato. Make sure your slices are fairly thin because if they’re too thick they won’t be as tender. Line the bottom of the greased baking dish with the potatoes. In a medium bowl beat the Eggs with a whisk and season with salt and pepper.
  4. Drain the prepared bison and top the potatoes with the browned bison and then pour the eggs on top. Sprinkle with Paprika and fresh Parsley as well as any additional toppings you’d like to add (perhaps spinach).
  5. Place the Bacon in the same skillet you browned the meat and cook until crispy.
  6. Place the dish in the oven and cook for 25 minutes. Remove from oven and spread the crispy bacon on top. Return to the oven and cook for an additional 10 to 15 minutes or until the edges of the egg begin to brown and the casserole is firm throughout.

Notes

If sliced thin enough the sweet potatoes do NOT need to be cooked prior to layering the bottom of the dish.

This casserole will be good in the fridge for 4 days after initial prep and stored in the fridge in an air-tight container.

Transform this casserole into individual servings by placing it in a silicone muffin pan instead of the baking dish. Great for kids!

      Thanks, Debs!! I think I’m reverting back to my childhood with a slight casserole obsession over here, only I’m trying to make them a tad bit more on the healthy side.
