This Roasted Cilantro Lime Corn is a simple summer side dish that’s fun to eat and enjoy when the other parts of your meal are being thrown on the grill.
Hello, summer! Hello, sweltering heat (in Charleston that is anyway…), Hello, simple and exciting side dishes cause everything else is being thrown on the grill.
Corn on the cob to me is what summer dinner dreams are made of and then being Southern the rest of the year its grits, which are indeed corn for those of you who don’t quite have the same obsession as me.
Summer dinner dreams are also made of easy meals made in minutes, well mine are at least but that’s probably my goal year round too. This super simple side dish is everything you could ever imagine for your summer meals. Let’s run down the list to be sure:
- It’s slathered in a cilantro lime butter.
- Sprinkled with chili powder for a little spice.
- Covered with crumbled feta. You can easily leave out, which I would highly discourage, and or also switch out for any other crumbly type cheese.
Dream dinner even if eaten alone!
If you leave the husks on the end, which is fun, I mean why not, then you can eat them straight up street corn style and what kid (or adult) doesn’t want to do that?!? Really though these corn on the cobb bad boys can be roasted straight in the oven with the husks left on. It’s summer, you’ve got more important things to do with your time than shuck corn.
While it’s roasting, which only take about 30 minutes, you can melt the cilantro lime butter and then proceed to pour it all over the corn and whatever else your eating that evening because this butter is ON POINT!
