The first time I tasted this dish I felt like a fraud in borrowed Chanel…
It was early September in New York, the air had just turned crisp and Fashion Week was in full swing. Not only were New Yorkers wearing their best-dressed garments, but they were also sporting that magical Autumn glow. At the time I was in the midst of launching a new clothing line. My own clothing line actually, that bore mine and my friend’s name.

In an attempt to display some of our garments from the new line prior to our launch, myself as well as my two other business partners were dressed head to toe in clothes from our collection. We’d borrowed Chanel bags and Louboutin’s from our third partner, also part-investor, to complete our looks and headed to Serefina on 60th street a “see and be seen” location on the Upper East. The days’ fashion shows were coming to a close and after parties were gearing up. The restaurant turned night lounge was packed with fashion elites, models and mavens and everyone looked as if they belonged.

I was literally and figuratively wearing my heart on my sleeve, as I was decked out in a dress I’d spent months bringing to completion. I can’t say if it was the borrowed Chanel bag or my exhaustion from late nights preparing the line for our launch, but I felt as out of place as a first-time fashion intern. I summoned as much cool disinterested confidence as those in the fashion industry so eloquently display and ordered a cocktail immediately.

The restaurant was dark with barely a glow from the tiny candles on each table so I quickly scanned the menu and choose the “Vegetarian Platter,” which I requested an addition of shrimp. Our dinner arrived and my dish was a beautifully stacked with seared shrimp, mixed vegetables atop spaghetti squash and sitting in a pool of marinara sauce. I’d never even heard of Spaghetti Squash, but this, this dish was so lovely I knew before I’d even gotten home that evening that I’d find a way to recreate it.

I have recreated this dish and do so many, many times since, and I’ve done so thinking of how far I’ve come since the first time I tasted it. Not only does this dish, piled with delicious vegetables an seared shrimp have sweet memories, but it’s also healthy. Really healthy! I feel like I’m really taking care of myself every time I prepare it.

Description

Seared Shrimp & Vegetable Spaghetti Squash Pasta is a gluten free healthy dinner option when you want to load up on veggies that taste great and stay full.


Ingredients

  • 1 Medium Spaghetti Squash
  • 1 lb Wild Caught Shrimp (peeled and tails removed)
  • 1 tablespoon + 1 teaspoon Olive Oil
  • 1 medium Zucchini (diced into small squares)
  • 2 medium Yellow Squash (diced into small squares)
  • 1 cup Corn (frozen is best)
  • 1 15 oz Glass Jar Tomato Sauce
  • 2 cloves garlic
  • 1 teaspoon Oregano
  • 1/2 teaspoon Paprika
  • Salt & Pepper to taste

Instructions

  1. Prepare the spaghetti squash by carefully using a knife to slice holes all around the squash (please don’t leave this step out, my Mother blew her’s up in the microwave and you wouldn’t believe the mess). This type of squash is very tough so be careful and don’t worry if your holes are not very deep. Place on a glass microwavable dish and cook for 16 – 18 minutes based on the size. Let cool!
  2. Place tablespoon of olive oil in a skillet and sauté garlic until it’s fragrant or begins to brown. Toss in zucchini and squash and sauté until vegetables soften, about 10 minutes. Add in frozen corn and continue to stir until cooked, about 4 for minutes. Set vegetables aside. Using the same skillet pour in final teaspoon of oil and sauté shrimp for about 5 minutes. Sprinkle with salt and pepper to taste.
  3. Once the spaghetti squash has cooled using a large knife cut off top of squash. Then turn squash and cut it in half length-wise. Scoop out seeds careful not to pull out too much of the spaghetti-like filling. Using a fork scoop out all the filling into a bowl. Toss the spaghetti squash with oregano, paprika, salt and pepper.
  4. Pour about 1/4 cup of marinara sauce on the bottom of each plate and then place strings of spaghetti squash on top. Continue to stack plate with vegetables and top with shrimp.
