This deconstructed Beef Burrito Skillet meal is full of all the burrito flavor you love minus the hassle of preparing it. With ground beef, black beans, melted cheese, and strips of tortilla tossed in you crave this super quick and simple dinner.
Recently, well 2 weeks ago, I made the Pinch of Yum Cauliflower Walnut Taco Meat and have been eating a taco lunch every day since. Basically living my best life, I’m not gonna lie, but really I’m loving it because it’s the perfect vegan meal, and obviously there’s the amazing taste. This post is NOT vegan though.
When Friday night rolled around last week and I had more flour tortillas than I knew what to do with, due to my lunch obsession, I figured there had to be some way to incorporate it into a dinner. Beef Burrito Skillet was what happened.
Really though, I also wanted an excuse to use my new Le Creuset skillet in I-don’t-even-know-what-color-that-is color. I think it works, right? Ever since I attended the Le Creuset Factory to Table Sale, which I tell just about anyone including the grocery store cashier this morning all about, I’ve been obsessed with including my new pieces into basically EVERY post I’m currently making. Why This Meal is Great…
We’ve cut back on dining out in our house for so MANY reasons, but one main reason is to be healthier and eating out is such a stumbling block for all family members included here. With it being October meals everywhere are taking on a cozy feel which, in my opinion, are often also better made at home.
Though this beef burrito skillet works year round it still fits nicely into a fall meal plan AND it’s Friday festive. Meaning, if you pair this dinner with some chips and homemade (or store bought, no judgment here) gauc and perhaps a margarita then you might as well be at the fanciest Mexican inspired restaurant in town. Certainly don’t wait till Friday to make this just as easy weeknight meal, because you won’t regret it.
Speaking of meal plans, my Mom asked me the other day what pies I would be making for Thanksgiving?!?! Whoa, Mom, chill it’s still October! Although I like to consider myself a savvy planner, thinking about Thanksgiving dinner right now might make my currently sleep deprived head explode. I’m still focused on those easy back-to-school dinners and one-pot meals like this beef burrito skillet.
This skillet dinner is lazy-girl fun too cause you just brown your meat and dump this rest of the ingredients in and your good. Don’t even if take it out of the skillet if you don’t have to, again, this is a NO judgment zone. And that’s exactly why this meal is great as if I even needed to go there.

Ingredients
- 1 lb Ground Beef
- 1 ounce Taco Seasoning
- 1 cup Salsa
- 1/2 cup Water
- 1 15 ounce can Black Beans
- 5 Flour Tortillas cut into 1-inch strips
- 1 cup Shredded Mexican Blend Cheese
- 1/2 cup Sour Cream optional
Instructions
- In a medium-sized skillet over medium heat, brown the ground beef until no longer pink. Drain the fat and return the skillet to the heat.
- Stir in the salsa, water, and black beans and cook for 10 minutes. Remove from heat.
- Add the tortillas to the skillet and toss to mix in with the beef mixture. Top with shredded cheese and drop sour cream on top.
