Meatball Sub Sandwiches are a classic and classics NEVER go out of style (and for good reason).
Reasons such as toasted bread slathered in basil pesto and marinara sauce, topped with juicy meatballs, melty cheese, and pickled jalapenos. Sheer deliciousness is enough reason for me, BUT those are 6 additional ingredients packed full of reason in case you needed more convincing.

I get that everyone is all “dry-January” and “sugar-free” this and “gluten-free” that right now and while I am also one of those people, I am allowing room for the occasional carb. How could you not when faced with a meatball sub sandwich? This also being potentially the reason I’m part of the crazed health crowd right now, but I didn’t get there with just one sub.
Although, tonight there was a chance my family and I had to split just one sub for dinner. Juicy, tender, savory meatballs were the offenders who enticed me to consume a few too many almost leaving me without enough to assemble enough subs for the entire family. True story…

Sometimes meals just inspire greatness… (surely someone famous and brilliant said that). I had zero intentions of turning this easy meal into a post, but when faced with such excellence how could I not? The rich read marinara and deep pesto greens lured me in and I had to share it with you.

Meatball Sub Sandwiches equal toasted bread slathered in basil pesto and marinara sauce, topped with juicy meatballs, melty cheese, and pickled jalapenos for one amazing dinner.
- 1 lb Ground Beef
- 1/4 cup Breadcrumbs (or Almond Meal)
- 1 large Egg, beaten
- 1 tablespoon Olive Oil
- 1 teaspoon Garlic Powder
- 1/2 teaspoon Paprika
- 1/4 cup Grated Parmesan Cheese
- 4 small Sub Rolls
- 4 tablespoons Pesto, divided
- 1 cup Marinara Sauce
- 4 to 6 ounces Havarti Cheese
- 1 tablespoon Jalapenos (optional)
- Garnish with chopped Chives (optional)
Preheat the oven to 320 degrees.
Meatballs: Line a large baking sheet with foil and spray or coat in oil. In a large bowl mash all the ingredients for the meatballs together and form into 1 1/2-inch sized balls. Place on the prepared baking sheet leaving space between each meatball. Cook for 22 to 25 minutes. With 3 minutes remaining set the oven to BROIL to toast the outer layer.
Sandwiches: Slice the bread almost to the edge. Slather one side of each roll with Basil Pesto and the other with the Marinara Sauce. Top with 3 to 4 meatballs per sub and layer the Havarti Cheese on top. Place on a baking sheet and put back in the oven to toast the bread and melt the cheese, about 3 to 5 minutes.
Garnish each sub with Jalapenos and Chives (optional).
Quick Marinara: Combined 8-ounces canned Tomato Sauce, 1/4 cup Tomato Paste, 1 tablespoon Oregano, 2 teaspoons Garlic Powder in a small saucepan set over medium-high heat. Bring to a boil and let cook for 5 minutes, stirring occasionally.
