WHAT YOU'LL NEED

COCONUT OIL GROUND TURKEY CHILI POWDER GARLIC POWDER EGGS SWEET POTATO BABY SPINACH

1.

Coat a 9x9 baking dish or pan in cooking spray or coconut oil.

2.

Layer the sliced sweet potatoes on the bottom of the dish.

4.

Melt the coconut oil in a skillet and cook the ground turkey. Place over the sliced sweet potatoes.

5.

Whisk the eggs in a large bowl and pour over the turkey.

6.

Sprinkle top with baby spinach and cook at 375ºF for 35 to 45 minutes.
