Always simple, these Baked Chicken Drumsticks are marinated in a lemon, garlic, olive oil dressing and seasoned with herbs de Provence, then baked to a crispy finish.

Ingredients

  • 3 lbs Chicken Drumsticks
  • 1/3 cup Olive Oil
  • 3 tablespoons Lemon Juice freshly squeezed
  • 4 Garlic Cloves minced
  • 2 tablespoons Herbs de Provence
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Freshly Cracked Pepper

Instructions

  • In a small bowl whisk the olive oil, lemon juice, garlic, and 1 tablespoon of the Herbs de Provence together. Place the chicken drumsticks in a large bowl and pour the oil mixture on top, tossing the drumsticks to coat. Store in the fridge for 30 minutes, up to 2 hours, to marinate.
  • Preheat the oven to 400 ℉ and lightly coat a rimmed baking sheet with oil. Arrange the drumsticks in a single layer on the pan, sprinkle with the remaining tablespoon of Herbs de Provance, salt, and pepper. Bake for 40 minutes, or until chicken is cooked through and reaches an internal temperature of 165 degrees.
