Equipment

  • Large Pitcher or Punch Bowl
  • Wooden Spoon

Ingredients

  • 2 liters Apple Cider
  • 1 cup Pumpkin Puree
  • 1/2 cup Brown Sugar
  • 2 teaspoons Pumpkin Pie Spice
  • 2 teaspoons Vanilla Extract

Instructions

  • Place the apple cider, pumpkin puree, brown sugar, pumpkin pie spice, and vanilla extract into a blender or into a large pitcher.
  • Pour the mixture into a large pot and heat over medium heat until the sugar had dissolved completely.
  • Allow it to cool completely and chill it in the fridge for at least 30 minutes before serving (unless serving it hot). Before serving give the mixture a good stir.

Notes

  • Before serving this juice give the mixture a good stir to mix the spices and pumpkin that starts to separate after sitting for too long.
  • Make your own Pumpkin Pie Spice by blending 1 tablespoon cinnamon, 1 teaspoon ginger, 1 teaspoon nutmeg, 1/2 teaspoon ground allspice, and 1/2 teaspoon ground cloves.
  • Heating the pumpkin mixture is an important step because it dissolves the sugar and also keeps the ingredients from separating after it has cooled.
  • Serve hot. Pumpkin juice doesn't have to be chilled. It can also be served in a steaming mug to keep you warm on those cold winter nights.
  • You can use both apple cider and apple juice for this recipe. Apple cider has a bolder fall flavor than apple juice, which is why I prefer to use it instead.

Storage and Freezing Information

  • Storage: Any leftovers can be kept in a pitcher with a lid or covered and stored in the fridge for up to 1 week.
  • How to freeze: Pour the mixture into a freezer-safe zip-top bag and place it in the freezer. It will last for 3 months in the freezer. Allow it to thaw overnight in the fridge before you plan on serving it.

Make Ahead Instructions

You can easily prepare this juice the night before you plan on serving it. If you choose to do this I recommend blending the mixture in a blender instead of stirring it together. Then before you plan on serving it give the mixture a good stir.
