Raspberry Bellini Recipe

This fruity cocktail is a modern spin on an Italian classic that's bursting with raspberry flavor. The Raspberry Bellini is made with fresh raspberries, raspberry syrup, and prosecco or champagne. It's the perfect celebration cocktail for any holiday or festive event.

  • 6 ounces Fresh Raspberries or frozen
  • 2 tablespoons Raspberry Syrup
  • 4 cups Sparkling Wine Prosecco or Champagne

Instructions

  • Prepare the raspberry puree. Place the raspberries and raspberry syrup into a food processor or small blender and blend until a puree form.
  • Strain out the seeds. Set a fine mesh sieve over a bowl or measuring cup. Strain the puree into the bow to remove the seeds.
  • Arrange the cocktail. Pour some of the strained strawberry purees into the bottom of a champagne flute. You can add as little or as much as you'd like. Top it off with Prosecco, sparkling wine, or champagne.
  • Garnish. The color of this beverage is beautiful. Elevate the beauty by adding a sprig of mint leaves or fresh raspberries as a garnish.

Notes

  • Use quality ingredients: Since a bellini typically only contains a few ingredients, it's important to use the best possible quality of each one. Use fresh fruit, good-quality sparkling wine, and high-quality sugar to ensure the best flavor.
  • Chill everything: To make a refreshing bellini, it's important to start with chilled ingredients. Chill your sparkling wine in the refrigerator first. Make sure your fruit puree is cold as well.
  • Use a blender or food processor: To create a smooth fruit puree, use a blender or food processor to process the fruit and syrup. Strain the mixture through a fine-mesh sieve to remove any seeds or pulp.
  • Get creative with your flavors: While peach is the most traditional fruit used in Bellinis, you can also experiment with other fruits, such as raspberry, strawberry, or even mango.
  • Try a different syrup. If you don't have raspberry syrup or don't want to make any you can use Simple Syrup instead or even agave.
