Raspberry Collins Cocktail

The Raspberry Collins is a fresh and fruity cocktail similar to a Tom Collins. Made using gin, fresh raspberries, raspberry syrup, lemon juice, and a splash of club soda, this is one delightful cocktail perfect for summer days.

  • 6 Fresh Raspberries
  • 2 ounces Gin
  • 1 ounce Lemon Juice
  • 1 tablespoon Raspberry Syrup
  • splash Club Soda

Instructions

  • Muddle the raspberries - Place the fresh raspberries into a cocktail shaker and muddle them or mash them with a wooden spoon. Making sure they break apart.
  • Shake vigorously - Add some ice to the cocktail shaker along with the gin, lemon juice, and raspberry syrup. Shake the mixture vigorously.
  • Double strain the mixture - Fill a collins glass or highball glass with ice and set a small mesh sieve on top. Double strain the cocktail mixture into the glass.
  • Pour in the club soda - Top with club soda, leaving about an inch of space at the top of the glass. Garnish with fresh raspberries and a lemon wedge.

Notes

  • Make your own syrup. If you don't have raspberry syrup on hand, you can make your own by blending fresh raspberries with simple syrup in a blender, then straining the mixture to remove the seeds and pulp.
  • Add some more flavor. To make your Raspberry Collins even more refreshing, try adding a few slices of cucumber or a sprig of fresh mint to the shaker before shaking.
  • Make it sweeter. For a sweeter cocktail, you can adjust the amount of raspberry syrup to taste. Add more for a stronger raspberry flavor, or less for a more subtle hint of sweetness.
  • Pour the club soda slowly. When adding the carbonated water, pour it slowly and carefully down the side of the glass to prevent it from fizzing over.
