Ingredients

  • 1/2 cup Granulated Sugar
  • 1/2 cup Water
  • 4 sprigs Rosemary

Instructions

  • Dissolve the sugar. In a small saucepan, combine the water and sugar. Heat the mixture over medium heat, stirring occasionally, until the sugar has dissolved.
  • Add the rosemary. Reduce the heat to low and add the rosemary sprigs. Let the mixture simmer for 5-7 minutes.
  • Strain. Let the syrup cool and strain the syrup through a fine-mesh sieve into a jar or bottle. Discard the rosemary sprigs.

Notes

  • Want to cool the syrup quickly? To rapidly chill the syrup, you can either place the container in the refrigerator or set it in an ice bath.
  • Looking for a thicker syrup? To create a thicker syrup, increase the amount of sugar to 1 cup and continue cooking the rosemary syrup mixture for an additional 10 minutes until it has reached the desired thickness.
  • To store it: It can be stored in the refrigerator for up to 3 weeks, but it's recommended to use it soon after making it for optimal freshness. If desired, the syrup can also be frozen by pouring it into a freezer-safe container and storing it in the freezer. It will stay fresh for up to 3 months when frozen.
