Ingredients

  • 1 lb Lean Ground Beef
  • 1/2 cup Instant Rice uncooked
  • 1/2 cup Panko Crumbs
  • 1/2 Onion grated or finely chopped
  • 2 tablespoons Fresh Parsley finely chopped
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 24 ounce jar Tomato Sauce
  • 1 package Instant Rice

Instructions

  • Prepare the meatballs. In a large mixing bowl combine the uncooked instant rice, panko crumbs, slightly beaten egg, grated onion, parsley, salt, and pepper until well mixed.
  • Add the ground beef. Using your hands crumble the ground beef on top and gently mix the ingredients together without mashing them.
  • Shape the meatballs. Place a deep heavy-bottomed pot on the stove and pour in the pasta sauce. Set the temperature to medium and allow the sauce to come to a gentle simmer. While the sauce is heating shape the meatball mixture into 2-inch-sized meatballs and set on a baking sheet.
  • Cook. Add the meatballs to the heated pasta sauce and place a lid on top. Let the meatballs cook for 25 minutes without lifting the lid.
  • Prepare the rice. With about 2 minutes left to cook prepare the remaining instant rice and spread it onto a platter. Spoon the meatballs and sauce over the rice.

Notes

  • Don't mash the ingredients together. When preparing the meatball mixture don't mash the ingredients together because this will result in tough meatballs. Crumble the meat over the other ingredients and then carefully mix it together.
  • Season generously: Don't be shy with the seasonings. Add a variety of herbs, spices, minced garlic, grated onion, or even Parmesan cheese to the meat mixture for enhanced flavor.
  • Choose your favorite rice. Any type of rice will work as long as it's instant rice and make sure to get extra for serving with the meatballs.
