- 2 cups Blueberries
- 1 cup Vanilla Greek Yogurt
- 1 cup Chocolate Chips
- 1 tablespoon Coconut Oil
Prep and coat the blueberries. Line a baking sheet with parchment paper (any size will work). Wash and thoroughly dry the blueberries before adding them to a large bowl. Pour the Greek yogurt over the blueberries and toss to coat them evenly.
Scoop out the clusters. Using a spoon scoop out some of the blueberry mixture and form it into a cluster on the prepared baking sheet. Opt for making smaller clusters so they freeze quicker and are more bite-sized. Place the tray in the freezer to freeze for 30 to 35 minutes.
Melt the chocolate. Pour the chocolate chips into a microwave-safe bowl and add the coconut oil (don't worry about mixing them). Place the bowl in the microwave for 2 30-second intervals, making sure to stir the mixture after each. If the chocolate chips aren't melting and mixing well pop the bowl in for an additional 20 seconds.
Cover the clusters. Drop the clusters into the melted chocolate mixture one at a time and use a fork to toss and coat completely. Return the cluster to the parchment-lined baking sheet and sprinkle with coarse salt (optional but oh, so good!). Let the chocolate set for about 10 minutes before enjoying it.
