Ingredients

  • 2 cups Blueberries
  • 1 cup Vanilla Greek Yogurt
  • 1 cup Chocolate Chips
  • 1 tablespoon Coconut Oil

Instructions

  • Prep and coat the blueberries. Line a baking sheet with parchment paper (any size will work). Wash and thoroughly dry the blueberries before adding them to a large bowl. Pour the Greek yogurt over the blueberries and toss to coat them evenly.
  • Scoop out the clusters. Using a spoon scoop out some of the blueberry mixture and form it into a cluster on the prepared baking sheet. Opt for making smaller clusters so they freeze quicker and are more bite-sized. Place the tray in the freezer to freeze for 30 to 35 minutes.
  • Melt the chocolate. Pour the chocolate chips into a microwave-safe bowl and add the coconut oil (don't worry about mixing them). Place the bowl in the microwave for 2 30-second intervals, making sure to stir the mixture after each. If the chocolate chips aren't melting and mixing well pop the bowl in for an additional 20 seconds.
  • Cover the clusters. Drop the clusters into the melted chocolate mixture one at a time and use a fork to toss and coat completely. Return the cluster to the parchment-lined baking sheet and sprinkle with coarse salt (optional but oh, so good!). Let the chocolate set for about 10 minutes before enjoying it.
