  • 2 tablespoons Ground Flaxseeds
  • 5 tablespoons Warm Water
  • 1/3 cup Coconut Oil melted
  • 1/2 cup Maple Syrup
  • 1 cup Bananas mashed
  • 1/4 cup Almond Milk
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Ground Cinnamon
  • 1/2 cup Chopped Walnuts plus more for garnish
  • 1 tablespoon Unsweetened Coconut Flakes plus more for garnish

  • Preheat oven to 325 degrees and grease a 9x5 inch loaf pan with additional coconut oil.
  • In a small bowl combine the ground flaxseed and warm water, set aside.
  • In a large bowl whisk the coconut oil and maple syrup together. Stir in the baking soda, vanilla, salt, cinnamon, and coconut flakes.
  • Use a for to mash the bananas and then add to the wet ingredient mixture.
  • Pour the flaxseed mixture into the batter and whisk to fully combine.
  • Using a large spoon stir in the flour until no lumps remain. Pour the batter into the prepared baking dish and sprinkle the top with additional walnuts and coconut flakes.
  • Bake for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean. Let the bread cool in the pan for 10 minutes before removing and transferring to a wire rack to finish cooling.
