- 2 tablespoons Ground Flaxseeds
- 5 tablespoons Warm Water
- 1/3 cup Coconut Oil melted
- 1/2 cup Maple Syrup
- 1 cup Bananas mashed
- 1/4 cup Almond Milk
- 1 teaspoon Baking Soda
- 1 teaspoon Vanilla Extract
- 1/2 teaspoon Salt
- 1/2 teaspoon Ground Cinnamon
- 1/2 cup Chopped Walnuts plus more for garnish
- 1 tablespoon Unsweetened Coconut Flakes plus more for garnish
- 1¾ cup Flour gluten-free version
Preheat oven to 325 degrees and grease a 9x5 inch loaf pan with additional coconut oil.
In a small bowl combine the ground flaxseed and warm water, set aside.
In a large bowl whisk the coconut oil and maple syrup together. Stir in the baking soda, vanilla, salt, cinnamon, and coconut flakes.
Use a for to mash the bananas and then add to the wet ingredient mixture.
Pour the flaxseed mixture into the batter and whisk to fully combine.
Using a large spoon stir in the flour until no lumps remain. Pour the batter into the prepared baking dish and sprinkle the top with additional walnuts and coconut flakes.
Bake for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean. Let the bread cool in the pan for 10 minutes before removing and transferring to a wire rack to finish cooling.
