Gingerbread Waffles

Sweetened with molasses and flavored with the seasonal ginger, cloves, nutmeg, and cinnamon spices, these Gingerbread Waffles are a decadent holiday breakfast. Serve them Christmas morning or for a merry winter brunch.

Ingredients

  • 2 cups Flour
  • 2 tablespoons Brown Sugar
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 3/4 teaspoon Salt
  • teaspoons Ground Cinnamon
  • teaspoons Ground Ginger
  • 1/4 teaspoon Nutmeg
  • 1/4 teaspoon Ground Cloves
  • 4 large Eggs
  • 6 tablespoons Oil
  • 1 cup Milk
  • 1/2 cup Plain Greek Yogurt
  • 3 tablespoons Molasses

Instructions

  • Preheat your waffle iron and coat with cooking spray.
  • In a large bowl whisk the flour, brown sugar, baking powder, baking soda, salt, and spices together until well combined.
  • In a separate small bowl beat the eggs, oil, milk, greek yogurt, and molasses together until smooth. Pour the wet mixture into the dry mixture and whisk until smooth and no lumps remain.
  • Pour 1/2 cup of waffle mix (or suggested amount according to your waffle iron manufacturer) on to the waffle iron and cook until golden brown. Let cool slightly before serving and fully before wrapping for storage.
