Ingredients

  • 1 lb Smoked Sausage
  • 1 Zucchini sliced
  • 1 Red Onion halved and quartered
  • 1 Green Bell Pepper seeded and diced
  • Red Bell Pepper seeded and diced
  • 1 cup Pineapple fresh or canned
  • 1/4 cup Barbecue Sauce
  • 1 tablespoon Soy Sauce

Instructions

  • Preheat the oven to 375 degrees. Prepare all your ingredients as instructed above such as dicing, slicing or peeling.
  • In a medium bowl place all the ingredients and toss to coat with the Barbecue Sauce and Soy Sauce.
  • Spread the mixture onto a rimmed baking sheet and place in the oven for 30 to 35 minutes are until the vegetables begin to darken and edges become crisp.

Notes

If using canned pineapple make sure to drain before adding it to the bowl.
