Sausage and Peppers in the Oven

Effortless, delicious, and can be made in under 35 minutes. Sausage and Peppers in the Oven is an easy weeknight meal made of Italian sausage, bell peppers, and onions. Seasoned with Italian seasoning and tossed in olive oil for one delicious and easy dinner.

Equipment

  • Large Rimmed Baking Sheet
  • Spatula

Ingredients

  • 1 lb Sausage Links
  • 3 large Bell Peppers red and yellow, sliced
  • 1 Red Onion halved and quartered
  • 1 tablespoon Italian Seasoning
  • 2 tablespoons Olive Oil
  • Fresh Parsley chopped

Instructions

  • Preheat the oven to 425º F. Prep all the vegetables by chopping and slicing them.
  • On a large rimmed baking sheet add the sausage, bell peppers, and red onions.
  • Drizzle the olive oil on top and add the Italian seasoning. Toss to coat the sausage, peppers, and onions.
  • Score the sausages in a few spots so they cook evenly.
  • Bake for 20 minutes and then flip the sausages and toss the peppers and onions. Return to the oven to cook for an additional 15 to 20 minutes.

Notes

  • The key to getting the peppers and onions to cook at the same time as the sausage is to use enough. If you use any less than this recipe calls for and you run the risk of the vegetables burning.
  • This recipe is best served fresh, but it can be reheated. If you think you'll end up with leftovers then I recommend getting a sausage such as a kielbasa which reheats easier than Italian sausage links.
 

Storage Tips

  • To Store: Place any leftovers in an air-tight container and store them in the fridge for up to 4 days.
  • To Reheat: Reheat any leftovers carefully in the microwave or in a skillet with cooking spray.
 

Serving Suggestions

  • Hoagie Rolls: This makes for a delicious weeknight dinner, but also a fun weekend meal. Pile the sausage, peppers, and onions on top and drizzle with your favorite sub sauce.
  • Mashed Potatoes
  • Rice
  • Cheese: Melt some cheese on top for a creamy and cheesy flavor.
  • Fajitas: Grab some tortillas and turn them into some fun fajitas.
  • Polenta or Grits: This can be served over some buttery and cheesy polenta or grits for a heartwarming meal.
  • Cauliflower Mash: If you're trying to keep your carbs low whip up some mashed cauliflower and spoon this sausage and peppers on top.
