Cheesy Chicken Tetrazzini Casserole

A classic family dinner, this Cheesy Chicken Tetrazzini Casserole is crispy on top with parmesan breadcrumbs and creamy on the inside. This casserole is filled with chicken, egg noodles, mushrooms, cheese.

Ingredients

BREADCRUMBS

  • 1/2 cup Breadcrumbs
  • 1/2 teaspoon Olive Oil
  • 1/4 cup Grated Parmesan Cheese

CASSEROLE

  • 1 lb Chicken Breast cooked and shredded
  • 12 ounces Egg Noodles cooked
  • 1 lb Mushrooms sliced
  • 6 tablespoons Butter divided
  • 1 tablespoon Sherry
  • 3 tablespoons Flour
  • 1/2 teaspoon Paprika
  • 1 teaspoon Onion Powder
  • 4 Garlic Cloves minced
  • 2 cups Chicken Broth
  • 1/2 cup Sour Cream
  • cup Milk or cream
  • 1 cup Shredded Cheddar Cheese

Instructions

  • Preheat the oven to 350 degrees and lightly grease a 9×13 baking dish or pan.
  • Prepare the noodles according to package directions but subtract 2 to 3 minutes from the boiling time.
  • Melt the 3 tablespoons of butter in a large skillet set over medium-high heat. Add the SherryMushrooms and a pinch of salt and saute until mushrooms become soft about 5 minutes. Remove mushrooms from the skillet at set aside.
  • Add the remaining 3 tablespoons of butter to the skillet and stir in the FlourPaprikaOnion Powder and minced Garlic, cook for 1 minute. Slowly whisk the broth into the mixture and continue to stir until the sauce thickens about 3 to 5 minutes.
  • Turn the heat down or remove the skillet from the burner. Whisk the Cream and Sour Cream into the sauce and stir until fully combined. Return to heat, or turn the heat back to medium and cook for 2 to 3 minutes or once the sauce bubbles. Turn off heat and stir in the Cheddar Cheese.
  • In the prepared baking dish toss the cooked noodles with the sauce, Shredded Chicken, and mushrooms. Sprinkle the prepared breadcrumbs on top of the casserole and cook for 30 to 35 minutes. Switch the oven to BROIL and cook (while watching) for another minute or until the breadcrumbs begin to brown.

Notes

Most any style of noodles such as fettuccini, egg noodle, and even spaghetti will work for this recipe.
