Ingredients

Chicken Lettuce Wraps

  • 1 tablespoon Vegetable Oil
  • 1 tablespoon Sesame Oil
  • 1 lb Ground Chicken
  • 1 3.5 ounce Package Shiitake Mushrooms diced
  • 1 Carrot peeled and diced
  • 1 Shallot minced
  • 4 Garlic Cloves minced
  • 1/4 cup Hoisin Sauce
  • 1 tablespoon Sweet Chili Sauce
  • 1 tablespoon Oyster Sauce
  • 2 tablespoons Fresh Cilantro chopped
  • 1 head Butter Lettuce

Peanut Sauce

  • 3 tablespoons Creamy Peanut Butter
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Fresh Squeezed Lime Juice
  • 2 teaspoons Brown Sugar
  • 1 teaspoon Sweet Chili Sauce

Instructions

Peanut Sauce

  • In a small bowl whisk all of the peanut sauce ingredients together until smooth. Slowly add water 1 tablespoon at a time until you reach the consistency you prefer. Set aside.

Chicken Lettuce Wraps

  • Place the vegetable oil and sesame oil in a large skillet over medium heat. Add the ground chicken, mushrooms, diced carrots, and minced shallot. Break the ground chicken apart using a spatula as it browns, about 5 to 7 minutes.
  • Add the garlic to the skillet and continue to cook for 1 more minute.
  • Add the hoisin sauce, sweet chili sauce, and oyster sauce. Toss to coat and remove skillet from heat. Stir in the fresh cilantro.
  • Gently remove any outer damaged lettuce layers and discard them. Place 8 to 10 lettuce leaves on a plate and spoon the chicken mixture into each leaf.
  • Drizzle each prepared lettuce wrap with the peanut sauce.
