Chicken Lettuce Wraps
- 1 tablespoon Vegetable Oil
- 1 tablespoon Sesame Oil
- 1 lb Ground Chicken
- 1 3.5 ounce Package Shiitake Mushrooms diced
- 1 Carrot peeled and diced
- 1 Shallot minced
- 4 Garlic Cloves minced
- 1/4 cup Hoisin Sauce
- 1 tablespoon Sweet Chili Sauce
- 1 tablespoon Oyster Sauce
- 2 tablespoons Fresh Cilantro chopped
- 1 head Butter Lettuce
Peanut Sauce
- 3 tablespoons Creamy Peanut Butter
- 1 tablespoon Soy Sauce
- 1 tablespoon Fresh Squeezed Lime Juice
- 2 teaspoons Brown Sugar
- 1 teaspoon Sweet Chili Sauce
Chicken Lettuce Wraps
Place the vegetable oil and sesame oil in a large skillet over medium heat. Add the ground chicken, mushrooms, diced carrots, and minced shallot. Break the ground chicken apart using a spatula as it browns, about 5 to 7 minutes.
Add the garlic to the skillet and continue to cook for 1 more minute.
Add the hoisin sauce, sweet chili sauce, and oyster sauce. Toss to coat and remove skillet from heat. Stir in the fresh cilantro.
Gently remove any outer damaged lettuce layers and discard them. Place 8 to 10 lettuce leaves on a plate and spoon the chicken mixture into each leaf.
Drizzle each prepared lettuce wrap with the peanut sauce.
