Refreshingly sweet and slightly bubbly, this Strawberry Basil Mojito is the perfect summery cocktail. With only a few simple ingredients and a homemade strawberry simple syrup, this is an easy and tasty cocktail.

Ingredients

  • 2 ounces White Rum
  • 2 ounces Strawberry Simple Syrup recipe below
  • 1/4 cup Lime Juice freshly squeezed
  • 8 Fresh Basil Leaves
  • 4 ounces Soda Water

Strawberry Simple Syrup

  • 1/2 cup Water
  • 1/4 cup Sugar
  • 5 Strawberries hulled and sliced

Instructions

Strawberry Simple Syrup Instructions

  • Place the water, sugar, and strawberries into a small saucepan and bring to a boil over medium-high heat. Stir the ingredients until the sugar is completely dissolved.
  • Remove from the heat and cover, let sit for 5 minutes or until the ingredients have cooled.
  • Use a fork to mash the strawberries into the mixture and then strain it through a mesh sieve to remove any seeds or large pieces.

Cocktail

  • Pour the rum, simple syrup, lime juice, and basil leaves into a cocktail shaker filled with ice. Shake the ingredients vigorously and then pour into two glasses filled with ice.
  • Add a splash of soda water on top and garnish with sliced strawberries and fresh basil leaves.
