Salisbury Steak

Ultimately cozy and comforting Salisbury Steak comes together in under 30 minutes making it a classic weeknight meal. These hamburger steaks drenched in mushroom gravy are best served over mashed potatoes. It's a classic family-friendly meal.

Ingredients

  • lbs Ground Beef
  • 1/2 cup Breadcrumbs
  • 3 tablespoons Olive Oil
  • 2 tablespoons Ketchup
  • 1 tablespoon Worcestershire Sauce
  • 1 teaspoon Mustard Powder
  • 1 Egg
  • 1/2 teaspoon Salt and Pepper (each)
  • 2 tablespoons Butter

Mushroom Gravy

  • 1 tablespoon Olive Oil
  • 6 ounces Mushrooms
  • 1/2 Onion diced
  • 2 cups Beef Broth
  • 1/4 cup Ketchup
  • 2 tablespoons Worcestershire Sauce
  • 1 tablespoon Cornstarch
  • 1 tablespoon Warm Water

Instructions

  • In a large mixing bowl combine the ground beef, breadcrumbs, 3 tablespoons olive oil, ketchup, 1 tablespoon Worcestershire sauce, mustard powder, egg, and salt and pepper.
  • Use your hands to mix the ingredients until evenly combined and then divide into quarters. Gently shape into a round patty (about 1-inch in thickness) and use your thumb to make an indentation in the center.
  • Place a large heavy-bottomed or cast-iron skillet over medium heat and melt the butter. Add the patties and cook on each side for about 5 to 7 minutes or until the center reaches 160ºF and the sides are slightly crispy and the patty is cooked through.
  • Using a slotted spoon remove patties and set aside on a plate for later.

Mushroom Gravy

  • In the same skillet and the remaining olive oil, mushroom, and diced onion. Cook until tender, about 3 to 5 minutes and use a slotted spoon to remove and place on the same plate as the patties.
  • Add the beef broth, ketchup, and Worcestershire sauce to the skillet and stir to combine.
  • Create a slurry in a small bowl by whisking the cornstarch and warm water together until the cornstarch has completely dissolved. Pour into the skillet and stir into the gravy mixture. Bring the gravy to a boil and reduce heat to low.
  • Place the patties and the mushroom mixture back into the skillet and let simmer until the gravy thickens, about 5 more minutes.

Notes

  • When forming the steak patties don't pack the beef together tightly. Loosely form it into an oval shape and use your thumb to make an indent in the center. This will keep the patty from shrinking as well as keep it tender while cooking.
  • Use a meat thermometer to check the temperature of the patties. You want to remove them from the skillet the minute they reach 165ºF.
  • Both the hamburger steaks and the gravy are freezable. To freeze, prepare the patties as directed and let cool completely or you can prepare them up to the point of cooking them. If cooked allow them to cool and place them in a freezer-safe storage bag. Prepare the gravy as directed and let it cool completely. Store it in a separate freezer-safe storage container or bag. It will last for up to 3 months stored in the freezer.
  • Try a Salisbury Steak Sandwich by serving the steaks on a hamburger bun for one ultimately delicious meal.
 

Oven Instructions

  1. To bake it in the oven prepare the steaks as directed and then sear the steaks with butter over medium heat in an oven-safe skillet or Dutch oven for 3 minutes on each side.
  2. Add the remaining olive oil, mushrooms, and diced onions to the skillet as well as the beef broth, ketchup, and Worcestershire sauce. Make the cornstarch slurry by combining the cornstarch and water in a small bowl and then stir into the skillet as well.
  3. Bake in an oven preheated to 350ºF for about 45 minutes or until the center of each steak reads 160ºF.
