Meatballs in Green Curry Sauce

Rich garlic flavor surrounds these herb-filled meatballs that are simmered in a creamy green curry sauce. This is a healthy dish full of rich flavor and is best served over rice.

Ingredients

Meatballs

  • 2 lbs Ground Beef
  • 1/4 cup Fresh Basil finely chopped
  • 4 Garlic Cloves minced
  • 2 tablespoons Fish Sauce
  • 2 tablespoons Sugar
  • 1 tablespoon Cornstarch
  • 2 teaspoons Salt
  • 2 tablespoons Oil

Curry Sauce

  • 1 medium Onion diced
  • 4 Garlic Cloves minced
  • 2 tablespoons Green Curry Paste
  • 2 14 ounce Cans of Coconut Milk
  • 2 tablespoons Lime Juice
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 1/4 cup Fresh Basil chopped
  • 1/4 cup Fresh Cilantro chopped

Instructions

Meatballs

  • Prepare the meatballs by mixing all the meatball ingredients together in a large bowl except the oil.
  • Heat the oil in a large skillet over medium heat. Using a cookie scoop measure out 2 tablespoon portions of the meatball mixture and roll it into a ball shape and place in the skillet. Brown the meatballs on all sides in batches of 10, but do not cook through. Remove meatballs when browned to a plate.

Green Curry Sauce

  • Drain out half of the oil in the skillet and add the diced onions to sauté for about 5 minutes, or until translucent. Add the garlic and continue to sauté for an additional 2 minutes.
  • Place the green curry sauce in the skillet and use a spatula to mix it with the onions and garlic.
  • Pour the coconut milk into the skillet and use a whisk to mix it together until smooth. Next add the lime juice, fish sauce, sugar, and salt. Bring the mixture to a boil and return the meatballs to the skillet.
  • Reduce heat to a simmer and cover the pan with a lid and cook for 20 minutes until the sauce has thickened. Stir the fresh basil and cilantro into the mixture.
