Ingredients

Quinoa Bowl

  • 2 cups Quinoa, cooked in 4 cups of water
  • 12 ounces Extra Firm Tofu
  • 2 teaspoons Coconut Oil
  • 1 teaspoon Lime Zest
  • 16 ounces Sweet Mini Peppers
  • 5 ounces Shiitake Sliced Mushrooms
  • 1 cup Mustard Greens
  • 1 small Lemon cut into wedges

Lemon Tahini Sauce

  • 1/3 cup Tahini
  • 1/4 cup Cold Water
  • 2 tablespoons Fresh Lemon Juice
  • 1 clove Garlic minced
  • 1 teaspoon Olive Oil
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Agave
  • 1/8 teaspoon Salt
  • 1/8 teaspoon Freshly Ground Black Pepper
