  • 1 cup Brown Sugar
  • 2 tablespoons Water
  • 6 tablespoons Butter
  • 1/2 teaspoon Salt
  • 1/2 teaspoom Cider Vinegar
  • 1 cup Heavy Cream
  • 1/2 teaspoom Rum Extract
  • 4 12 ounce Cream Soda

Instructions

  • Melt the brown sugar. In a small saucepan over medium heat combine the brown sugar and water. Clip a candy thermometer to the side (optional) and bring the mixture to a boil, stirring continuously. Once it reaches 240º F or is at a rolling boil, about 5 minutes, reduce the heat to low.
  • Prepare the brown sugar mixture. Add the butter, salt, and cider vinegar to the melted brown sugar. Stir until the butter completely melts and the ingredients are fully mixed. Remove from heat and stir in the rum extract. Let the mixture cool completely.
  • Arrange. Spoon 2 to 3 tablespoons (or more if desired) of the brown sugar base mixture into the bottom of each glass. Top with cream soda and fill the glass to about 3/4 full and stir the contents together.
  • Beat the whipped topping. In a medium bowl using a handheld electric mixer beat 2 tablespoons of the brown sugar mixture and the heavy cream together until it's thickened and starts to form soft peaks.
  • Garnish. Top each glass with the homemade whipped topping.

Notes

  • Chill the ingredients. If you're planning to serve cold butterbeer, chill the base mixture in the refrigerator until you're ready to use it as well as the cream soda.
  • Whipped Topping. If you plan to top the butterbeer with whipped cream, you can prepare the whipped cream ahead of time and store it in the refrigerator.
  • To quickly cool the brown sugar and butter mixture I place the small saucepan in the fridge for a few minutes, which will decrease the overall prep time.
  • Hot Butterbeer: If you're making hot butterbeer, instead of chilling the brown sugar mixture pour it directly into your desired cups. You'll also want to keep the cream soda at room temperature before adding it to the cup.
