Ingredients

Peach Syrup

  • 1/4 cup Water
  • 2 tablespoons Honey
  • 1 large Peach

Green Tea

  • 2 teaspoons Matcha Green Tea
  • 4 ounces Water
  • 1 tablespoon Honey
  • splash Soda Water

Instructions

  • Make the peach syrup. Add the water, 2 tablespoons of the honey, and peach sliced to a small saucepan and bring to a simmer over medium heat. Reduce the heat to low and let it simmer for 5 to 10 minutes until the peaches have softened. You can also make a large batch of Peach Syrup to keep on hand.
  • Prepare the tea. Bring the 4 ounces of water to a soft boil and add the matcha. Using a whisk or frother mix the matcha into the heated water. Once fully combined add the remaining honey and mix it into the tea.
  • Assemble the drink. Fill your desired glass with ice and pour the peach syrup into the bottom of the glass.
  • Add the green tea. Very slowly pour the green tea over the syrup filling the glass about 3/4 full.
  • Top it off with soda water. Add a splash of soda water to the top of the glass to add a fizzy finish.

Notes

  • Use a frother. When preparing Green Tea I like to use a frother so the tea is perfectly mixed into the hot water.
  • Layer the drink. For a pretty presentation slowly add the drink layers, starting with the peach syrup, then the green tea, and lastly top it off with soda water.
  • Matcha Quality. If using matcha powder, consider using ceremonial grade for a smoother and more refined taste.
  • Soda Water. When adding soda water, do so just before serving to maintain the carbonation and fizziness.
