Ingredients

  • 1 cup Water
  • 1 cup Sugar
  • 1 cup Pistachios
  • 1/8 teaspoon Salt leave out if the pistachios are salted
  • 1 teaspoon Almond Extract

Instructions

  • Chop the pistachios. Using a knife chop the pistachios into pieces. You can also pour them into a zip-top back and crush them with a meat tenderizer.
  • Heat the syrup. Add the water, sugar, and chopped pistachios to a large pot and bring to a simmer over medium heat. Reduce the heat to low and allow it to simmer for 10 minutes. Remove the pot from the heat and stir in the almond extract.
  • Strain the mixture. Place a mesh sieve over a bowl and line it with a cheesecloth. Pour the syrup into the cheesecloth and let the syrup drain into the bowl. Discard the remaining sediment.
  • Store. Let the syrup cool before pouring it into an air-tight container or bottle for storing. Keep it stored in the fridge.
