Instructions
Chop the pistachios. Using a knife chop the pistachios into pieces. You can also pour them into a zip-top back and crush them with a meat tenderizer.
Heat the syrup. Add the water, sugar, and chopped pistachios to a large pot and bring to a simmer over medium heat. Reduce the heat to low and allow it to simmer for 10 minutes. Remove the pot from the heat and stir in the almond extract.
Strain the mixture. Place a mesh sieve over a bowl and line it with a cheesecloth. Pour the syrup into the cheesecloth and let the syrup drain into the bowl. Discard the remaining sediment.
Store. Let the syrup cool before pouring it into an air-tight container or bottle for storing. Keep it stored in the fridge.
