Baked Balsamic Chicken
Simple and healthy ingredients with a culmination of bold flavors such as oregano, garlic, and shallots. Baked Balsamic Chicken is tender meat covered in melted mozzarella cheese and surrounded in a tangy balsamic sauce.
Servings: 4 Servings
- 4 Boneless, skinless, Chicken Breast
- 2 tablespoons Olive Oil
- 1 teaspoon Oregano
- 1/2 teaspoon Salt
- 6 Garlic Cloves minced
- 2 cups Grape Tomatoes
- 1 Shallot sliced
- 1/4 cup Balsamic Vinegar
- 1 tablespoon Brown Sugar
- 6 ounces Mozzarella Cheese torn into pieces
- 1 tablespoon Fresh Basil chopped
Preheat the oven to 425 degrees.
Place the Chicken Breast into a large baking dish and brush the Olive Oil onto each piece and spread the Minced Garlic on top. Season with Oregano, Salt, and Pepper (if desired). Arrange the Tomatoes and diced Shallot around the chicken pieces in the dish.
Whisk the Balsamic Vinegar and Brown Sugar together in a small bowl and pour over the chicken.
Bake in the oven for 20 to 25 minutes or until chicken reaches an internal temperature of 165 degrees ℉. Remove the dish from the oven and layer each piece of chicken with the Mozzarella Cheese. Set oven to BROIL and return the chicken to the oven. Cook for 2 to 3 minutes or until the cheese is fully melted and begins to bubble.
Garnish with Fresh Basil.
