Balsamic Chicken with Mozzarella

This delicious chicken with mozzarella melted on top is tender and juicy with a strong flavorful kick from the sauce. All the ingredients go straight into the baking dish for an easy one-pot meal. There’s also plenty of sauce to pour over the chicken when serving.

Balsamic Chicken Marinade

This is purely optional, however, if you’d like even more flavor you can marinate the chicken for up to 8 hours. Whisk the ingredients listed below together and place it in a shallow baking dish or sealed plastic bag with the chicken.

  • 2 tablespoons Olive Oil
  • 1 teaspoon Oregano
  • 1/2 teaspoon Salt
  • 6 Garlic Cloves, minced
  • 1/4 cup Balsamic Vinegar
  • 1 tablespoon Brown Sugar

How to Bake Chicken Breast

  • Prep the chicken: If marinating the chicken prepare ahead of time, otherwise, brush the chicken with olive oil and season with ingredients.
  • Prepare the sauce: whip the balsamic vinegar and brown sugar together until dissolved and pour over the chicken.
  • Bake: top the dish with the remaining ingredients and bake for 15 to 20 minutes.

How Long to Bake Chicken Breast

When baking chicken at 425ºF the meat will typically cook in 15 to 20 minutes. The internal temperature of the chicken should reach 165ºF on a meat thermometer.

Delicious Side Dish Options

When I prepared this dish I sliced my piece of chicken, placed it over a bed of greens, and drizzled some extra balsamic juice from the pan on top. My kids enjoyed theirs served with some whipped mashed potatoes. It wasn’t complex as I so often say the best recipes aren’t.

Ingredients

  • 4 Boneless, skinless, Chicken Breast
  • 2 tablespoons Olive Oil
  • 1 teaspoon Oregano
  • 1/2 teaspoon Salt
  • 6 Garlic Cloves minced
  • 2 cups Grape Tomatoes
  • 1 Shallot sliced
  • 1/4 cup Balsamic Vinegar
  • 1 tablespoon Brown Sugar
  • 6 ounces Mozzarella Cheese torn into pieces
  • 1 tablespoon Fresh Basil chopped

Instructions

  • Preheat the oven to 425 degrees. 
  • Place the Chicken Breast into a large baking dish and brush the Olive Oil onto each piece and spread the Minced Garlic on top. Season with Oregano, Salt, and Pepper (if desired). Arrange the Tomatoes and diced Shallot around the chicken pieces in the dish.
  • Whisk the Balsamic Vinegar and Brown Sugar together in a small bowl and pour over the chicken.
  • Bake in the oven for 20 to 25 minutes or until chicken reaches an internal temperature of 165 degrees ℉. Remove the dish from the oven and layer each piece of chicken with the Mozzarella Cheese. Set oven to BROIL and return the chicken to the oven. Cook for 2 to 3 minutes or until the cheese is fully melted and begins to bubble.
  • Garnish with Fresh Basil.
