Ingredients

  • 2 ounces Gin
  • 1/2 ounce Lemon Juice
  • 1/2 ounce Raspberry Syrup
  • 1 Egg White
  • Raspberries for garnish

Instructions

  • Add the ingredients to the cocktail shaker. Pour all of the ingredients into a cocktail shaker, but don't include ice.
  • Dry shake. Dry shake (shake without ice) for about 10-15 seconds to emulsify the egg white.
  • Add ice. Add ice to the shaker and shake vigorously for another 10-15 seconds.
  • Strain. Strain the cocktail into a chilled glass.

Notes

  • Dry shake the egg white: Dry shaking the egg white without ice helps to emulsify it, resulting in a smoother, creamier texture.
  • Shake vigorously with ice: Once you've dry shaken the egg white, add ice to the shaker and shake vigorously. This will help to chill the cocktail and create a nice frothy texture.
  • Swap the raspberry syrup for grenadine: While the raspberry syrup is a key ingredient in a Clover Club Cocktail, it is possible to swap it out for grenadine if you don't have raspberry syrup on hand. Grenadine is a pomegranate-based syrup that was commonly used as a sweetener in cocktails during the early 20th century, so it is possible that some bartenders may have experimented with using grenadine in place of raspberry syrup.
