- 10 Medjool Dates pitted
- 3 tablespoons Peanut Butter
- 1/4 cup Peanuts crushed and divided
- 1/2 cup Chocolate Chips
- 1 teaspoon Coconut Oil
Prepare the dates. If using pitted dates, find the side opening and open it up. If not pitted, then cut a slit along the side and remove the pit.
Fill in the dates. Start by filling each Medjool date with approximately ½ teaspoon of peanut butter, ensuring they are nicely filled. Then, give them a delightful touch by sprinkling a pinch of crushed peanuts on top. Set the prepared dates aside for further use in the recipe.
Make the chocolate coating. Add the chocolate chips and coconut oil to a microwave-safe bowl and melt them together in the microwave in 15-second intervals. Stir after each interval until the mixture is smooth, which should take from 1 to 2 minutes.
Coat each date in chocolate. To coat each stuffed date, stick a toothpick into it and dredge it into the melted chocolate. Use a spoon to thoroughly coat each date and set it on a parchment-lined baking sheet.
Chill. Sprinkle some additional crushed peanuts on top of each coated date and place the pan in the fridge to harden the chocolate coating for about 30 minutes.
