Healthy Date Snickers are a nutritional powerhouse thanks to their key ingredients: Medjool dates provide natural sweetness along with fiber, vitamins, and minerals; peanut butter adds protein and healthy fats; crushed peanuts offer a satisfying crunch and additional protein; dark chocolate chips provide antioxidants and a rich, indulgent flavor; while coconut oil adds a touch of healthy fat and promotes satiety, making these treats a guilt-free delight for your taste buds and your well-being.

I love making healthy treats like this Healthy Chocolate Bark alongside my kids. They’re easy for them to make and a delicious treat I don’t mind them eating.

Ingredients Needed

Date Snickers ingredients.
  • Medjool Dates – Medjool dates are an ideal choice due to their natural sweetness, soft and chewy texture, and rich flavor. They not only contribute to the delectable taste of the Snickers but also offer a dose of dietary fiber
  • Peanut Butter – Incorporating peanut butter or any nut butter adds creamy, nutty goodness to the recipe. Not only does it enhance the flavor profile, but nut butter also brings a host of health benefits.
  • Crushed Peanuts – While crushed peanuts are optional, they add a delightful burst of flavor and a satisfying crunch to the Snickers Stuffed Dates, elevating the overall taste experience and providing a contrasting texture that enhances the enjoyment of each bite.
  • Chocolate Chips – To create a delectable chocolatey coating just like in my Chocolate Covered Blueberry Clusters you’ll melt chocolate chips and dredge the stuffed dates to coat them.
  • Coconut Oil – A little coconut oil helps to keep the chocolate perfectly smooth as you dip the stuffed dates.

How to Make Snickers Stuffed Dates

Snickers stuffed dates step 1.
  1. Prepare the dates. If using pitted dates, find the side opening and open it up. If not pitted, then cut a slit along the side and remove the pit.
  2. Fill in the dates. Start by filling each Medjool date with approximately ½ teaspoon of peanut butter, ensuring they are nicely filled. Then, give them a delightful touch by sprinkling a pinch of crushed peanuts on top. Set the prepared dates aside for further use in the recipe.
Date Snickers process step 2.
  1. Make the chocolate coating. Add the chocolate chips and coconut oil to a microwave-safe bowl and melt them together in the microwave in 15-second intervals. Stir after each interval until the mixture is smooth, which should take from 1 to 2 minutes.
Date snickers process step 4.
  1. Coat each date in chocolate. To coat each stuffed date, stick a toothpick into it and dredge it into the melted chocolate. Use a spoon to thoroughly coat each date and set it on a parchment-lined baking sheet.
  2. Chill. Sprinkle some additional crushed peanuts on top of each coated date and place the pan in the fridge to harden the chocolate coating for about 30 minutes.

Recipe Tips and Ticks

  • Use dates that are not pitted. I recommend removing the pits yourself so you can control the size and length of each slit.
  • For a no-mess way to fill the dates using an icing bag. Fill an icing bag with peanut butter or a zip-top bag with the corner cut off and pipe the peanut butter filling into each date.
  • Soften the dates. If your dates are slightly dry or firm, you can soak them in warm water for a few minutes to soften them before stuffing them with peanut butter. Just make sure to pat them dry before proceeding.
  • Chill before serving. After stuffing the dates, it’s a good idea to place them in the refrigerator for about 30 minutes to allow the chocolate to firm up. This will make them easier to handle and enjoy.

Variations

  • Nut Butter Swap: Instead of using peanut butter, try using different nut butter such as almond butter, cashew butter, or hazelnut butter. Each will bring a unique flavor profile to the stuffed dates.
  • Topping Varieties: Besides crushed peanuts, consider using alternative toppings. Shredded coconut, chopped pistachios, crushed almonds, or even a drizzle of honey or maple syrup can provide different textures and flavors.
  • Spiced Flavors: Add warmth and depth to the filling by incorporating spices like cinnamon, nutmeg, or cardamom. These spices can complement the sweetness of the dates and create a cozy flavor profile.
  • Frozen Treats: For a refreshing twist, freeze the stuffed dates. Enjoy them straight from the freezer as a chilled and satisfying treat on hot days.
