  • lbs Prickly Pears
  • 1 cup Sugar
  • cups Water

Instructions

  • Remove the pulp. Halve the prickly pears, scoop out the pulp, and transfer to a pan.
  • Mash the pulp. Mash pulp and seeds with a potato masher.
  • Add the sugar and water. Add the sugar and water to the pot, bring to a boil, then simmer on low for 15 minutes until syrup forms.
  • Strain. Set a strainer over a bowl or cup that fits the syrup. Pour the warm syrup through, gently stirring the pulp without pressing on the pulp so the syrup doesn't end up murky. Transfer the mixture to your desired container.

  • Cool it. Allow it to cool completely before transferring it to a container.
  • Transfer it to your desired container. Carefully pour it into a jar or bottle with a tightly fitting lid.
  • Refrigerate: Store the container in the refrigerator. Prickly pear syrup can be kept in the fridge for several weeks to a few months, depending on the sugar content and how airtight the container is.
