Halloween Pancake Recipe

Ingredients

  • cups Flour spoon and leveled
  • 2 teaspoons Pumpkin Pie Spice
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1/2 cup Pumpkin Puree
  • 3/4 cup Milk
  • 2 large Eggs
  • 2 tablespoons Oil or melted butter
  • 2 tablespoons Maple Syrup

Icing

  • cups Powdered Sugar
  • 2 - 3 tablespoons Milk
  • 2 teaspoons Vanilla Extract
  • 10 Blackberries
  • Candy Eyes
  • Cookie Icing

Instructions

  • Whisk the dry ingredients together. In a mixing bowl whisk the flour, baking powder, baking soda, pumpkin pie spice, and salt together until combined.
  • Mix the wet ingredients. In a separate mixing bowl mix the pumpkin puree, milk, eggs, maple syrup, and oil together until fully mixed.
  • Combine the two mixtures. Make a well in the center of the dry ingredients and pour the wet ingredients in. Mix the two together until well combined, some lumps will remain.
  • Cook. Spray a non-stick pan with cooking spray and heat it over medium-high heat. Using a ladle, pour the batter onto the pan, making small or medium-sized pancakes. Cook the pancakes until the edges start to dry and small bubbles appear on the surface. Flip the pancakes and cook for an additional minute on the other side.
  • Make the icing. In a mixing bowl whisk the powdered sugar, milk, and vanilla together until a smooth consistency forms. Pour the icing into a zip-top bag and snip a very small piece of the bottom corner for piping the icing.
  • Decorate. Pipe an icing swirl on each pancake, starting in the center and going all the way to the edge. Use a toothpick to draw lines from the center of the swirl to the edge to create the spider web look. Place two tiny dots of cookie icing onto each blackberry and adhere the candy eyes to the blackberry. Add them to the pancakes.

Notes

  • Make the pancakes the same size. Use a measuring cup or ladle to ensure your pancake sizes are consistent for even cooking.
  • Keep the pancakes warm. To serve a batch of pancakes warm, place them on a baking sheet in a preheated oven at a low temperature (around 200°F or 95°C) while you finish cooking the rest.
  • Spiderweb Icing: Use a squeeze bottle or a plastic sandwich bag with a small hole cut in one corner to create intricate spiderweb designs with your icing.
  • Prep Ahead: Prepare some of the ingredients, like the spider decorations, in advance to save time on the busy Halloween morning.
