These zesty Italian Marinated Mushrooms are an easy side that compliments many main courses as well as makes a great side. They’re a unique addition to any charcuterie board and can be pulled together in under 15 minutes.

Mushrooms have always been a staple in our home and I use them in tons of recipes. Most recently I’ve been making this Cream of Mushroom Chicken and it’s a huge family hit.

The best part about mushrooms is obviously their taste, but their ability to take a simple recipe to the next level flavor-wise like they do in Salisbury Steak or Beef Stroganoff.

These mushrooms are even simpler than those recipes but have an intense zesty Italian flavor. They are filled with garlic and herbs, which pairs nicely with steak like Churrasco. There are so many ways you can use them too.

  • Mushrooms – For this recipe, I like to use a mixture of smaller button mushrooms and crimini mushrooms because they have large round tops. The mushrooms will need to be whole.
  • Olive Oil – The oil is a key ingredient in the marinade so you’ll want to use a high-quality type of olive oil to get the best flavor.
  • Cider Vinegar – Cider vinegar will work best but you can also use champagne vinegar or red wine vinegar too.
  • Italian Seasoning – Make your own Italian seasoning or use the store-bought mixture, both will work.

How to Make the Best Marinated Mushrooms

  1. Blanch the mushrooms. Pour the water into a large pot and add the mushrooms and salt. Bring the water to a boil and then reduce the heat to a simmer. Continue to cook, stirring occasionally, for 3 minutes. Drain and let the mushrooms cool.
  2. Prepare the marinade. In a small bowl whisk the olive oil, cider vinegar, lemon juice, shallots, minced garlic, Italian seasoning, thyme, and fresh parsley together to make the marinade.

  1. Marinate. Allow the mushrooms to soak up the delicious flavor by placing the mushrooms into a large bowl and pouring the marinade on top. Toss to coat the mushrooms and then cover and refrigerate. Let them sit for around 8 hours or overnight.

Serving Suggestions

  • Appetizer in a bowl.
  • Place them on a charcuterie board.
  • Spoon them over steak, chicken, or fish.
  • Serve them as a side dish.
  • Toss them into an antipasto or any pasta.

Storage and Make Ahead Instructions

You can easily make these mushrooms ahead of when you plan on serving them and easily store them in your fridge. They’re ready to enjoy after just 5 minutes of marinating but the longer they soak the better. This version of marinated mushrooms doesn’t freeze well, unfortunately.

  • Storage and Leftovers Instructions – Place the mushrooms along with the marinade into an air-tight container and place it in the fridge. They will last for up to 10 days stored properly.
  • Make-Ahead Instructions – Follow the recipe directions and then just place them in an air-tight container and keep it in the fridge until ready to serve. I recommend making them 1 to 2 days in advance.
