- Add in the vegetables and fruit. Add the red bell peppers, scallions, pineapple, and pineapple juice. Cook for an additional 5 minutes tossing to combine the ingredients.
- Mix in the sauce. Place about 2/3 of the sauce into the skillet. Toss to coat and cook another 5 minutes or until it begins to thicken. Serve over rice and drizzle the remaining sauce on top.
